Cubelles
Baked in a lidded Pullman pan, this dessert achieves perfectly sharp corners and a precise, geometric silhouette. The lid traps steam and limits expansion, resulting in an incredibly moist, dense crumb with a crust so thin it’s almost non-existent.
Nama Cloud donuts
By forgoing the lid, this "mountain-style" bread is free to rise into its signature fluffy, domed shape. This unrestricted growth creates a significantly lighter and airier texture compared to its square counterpart, paired with a more robust, golden-brown crust.
