The primary distinction between our desserts is the baking method we use to create them. The square Cubelles are confined by a lid to create a sharp, dense cube, while the round-top Nama Cloud Donuts are allowed to rise freely into a fluffy, domed peak. Because it is essentially steamed inside a closed pan, the Cubelles feature a nearly non-existent crust and a remarkably consistent crumb. In contrast, the Nama Cloud Donuts develop a deeper, toasted crust and a much loftier interior, providing a more rustic aesthetic and a lighter bite. Ultimately, the choice comes down to whether you prefer the silky, structural precision of a precision-baked square or the airy, cloud-like volume of a mountain-style dessert.
